Try This Carrot and Beetroot Salad

Method

  1. Peel and grate your vegetables. If possible, use the grater attachment on the food processor for a faster, less messy experience. It also leaves the veggies nice and juicy, not mushy.
  2. Toss them in a large bowl with all other ingredients except the dukkah
  3. Mix up the dressing and pour over salad, then toss through
  4. Sprinkle over the dukkah before serving

 

Tip

This salad lasts super well even once dressed, so it’s great for entertaining or lunch the next day. The dukkah takes about 10 minutes to make, but if you don’t have that time you could throw in some other chopped nuts like almonds or pistachios instead. No pomegranate? Try raisins.
