SPICE UP YOUR LIFE WITH MASALA SCRAMBLED EGGS

Cooking time: 20 minutes
Serves: 4
Ingredients:
- 4 tbsp olive oil
- 3 large onions, chopped
- 2 spinneysFOOD tomatoes, chopped
- ½ tsp turmeric powder
- ½ tsp cumin powder
- 1.5 tsp coriander powder
- 6 spinneysFOOD organic free-range eggs, lightly whisked
- Pinch of spinneysFOOD salt
- Micro herbs to garnish
- Toasted country bread
Method:
- Heat the olive oil in a frying pan and cook the chopped onions for about 10 minutes, until they become soft and translucent
- Add the chopped tomatoes to the pan and cook for a further 2 minutes
- Add the turmeric, cumin and coriander power
- Add the eggs and season with sea salt
- Continuously stir the mixture with a wooden spoon for about 5 minutes, keeping it moving until the eggs are cooked through
- Garnish with micro herbs and serve with toasted country bread
