SPICE UP YOUR LIFE WITH MASALA SCRAMBLED EGGS

Ingredients:

  • 4 tbsp olive oil
  • 3 large onions, chopped
  • 2 spinneysFOOD tomatoes, chopped
  • ½ tsp turmeric powder
  • ½ tsp cumin powder
  • 1.5 tsp coriander powder
  • 6 spinneysFOOD organic free-range eggs, lightly whisked
  • Pinch of spinneysFOOD salt
  • Micro herbs to garnish
  • Toasted country bread

 

Method

  1. Heat the olive oil in a frying pan and cook the chopped onions for about 10 minutes, until they become soft and translucent
  2. Add the chopped tomatoes to the pan and cook for a further 2 minutes
  3. Add the turmeric, cumin and coriander power
  4. Add the eggs and season with sea salt
  5. Continuously stir the mixture with a wooden spoon for about 5 minutes, keeping it moving until the eggs are cooked through
  6. Garnish with micro herbs and serve with toasted country bread
