This is an alternative to guacamole. Make it as spicy as you want by adding extra peppers or none at all, if you are not into spicy food. Add it to toast or serve with sweet potatoes for additional healthy fat, fibre and protein content.
2 garlic cloves
1 tablespoon lemon juice
¼ cup of water
Add ½ cup fresh parsley, 1 jalapeño or 1 chilli pepper
1. Skin the avocados and remove the stone. They should be ripe enough for you to be able to scoop the flesh out with a tablespoon.
2. Add all ingredients into a blender jar and blend until combined. It will keep in the fridge for up to 3 days. Serve chilled.
