
Pea Spinach Pesto
Use this pesto with any pasta dish to up its protein, fibre and healthy fat content. It sports a rainbow of nutrients: vitamins A, C, K, thiamin, B6, folate and minerals iron, magnesium, phosphorus, manganese. It is also high in omega-3 and omega-6 fatty acids.
INGREDIENTS
1 cup frozen spinach
1 cup frozen green peas
1 cup fresh basil leaves
1 cup water
INSTRUCTIONS
1. Add all the ingredients to a food processor and blend until combined.
LEVEL UP
Add 4 garlic cloves, ½ cup pine nuts and or 2 tablespoons olive oil.
